| Directions | Spray PAM or sprinkle olive oil on bottom of baking dish. Lay 4 chops in bottom of dish. In mixing bowl, combine bread, onion, apple, salt, pepper. Sprinkle 2 T. olive oil and 2 T. water over bread, slightly more water if needed. Mix by hand to form 4 firm balls of stuffing. Lay stuffing on top of each pork chop. Lay remaining 4 chops on top of stuffing. Push down a bit to secure the top chop. Sprinkle with a bit of olive oil and salt and pepper to taste. Cover and bake at 350° for about 2 hours. As it is cooking, pour in apple juice or cider, a little at a time, to make sure the chops will not stick and burn. Check this dish every half hour as it is baking to add a bit of liquid. There should be about 1/4 - 1/2" liquid on the bottom of pan. *NOTE: You can also add potatoes and carrots and bake together for a complete meal. Makes 4 servings. |
