| Directions | Cook sausage, onion and peppers. Stir in rotel; simmer. Spray a 9" x 13" pan with cooking spray. Tear tortillas in pieces. Layer 1/2 tortillas, sausage and cheese. Repeat layers. Beat together, eggs, milk, salt and pepper. Pour over layers. Bake lightly covered at 350° for 30-45 minutes. Note: This can be made the night before, refrigerated and baked in the morning for breakfast. |
