Scald milk. Pour into mixing bowl and add butter and potato flakes. Cool to lukewarm. Add brown sugar and salt. Dissolve yeast and sugar in warm water. Let sit until frothy. Add to milk mixture. Gradually add white flour until dough leaves sides of bowl. Knead until smooth and not too sticky, adding flour if needed, about 10 minutes. Put in greased bowl, turn dough and cover. Let rise until doubled. Then it's ready for calzones.
This is my favorite bread recipe from Peggy Seppala but you can use any recipe or store bought dough. This dough makes about 32 calzones, you can do part calzones and the rest bread.
