- Clean out the inside of the chicken and rinse the inside and outside of the chicken. Pat dry and sprinkle with garlic salt and pepper inside as well as outside.
- Lay down some aluminum foil on your grates which will prevent flare ups plus make it a bit easier to clean up.
- Open the can of beer and pour out (or drink) about 1/4 of the beer. This will just help prevent spilling it when working with it. Place the open end of the beer can into the cavity of the chicken. Once it is inserted the chicken's legs should support it so it will stand up.
- If you're using a charcoal grill, just place the chicken in the middle of the grill over evenly spread white ashes. With gas, turn one burner on at medium heat and place the chicken over the burner that is turned off.
- Cover your grill and just let it go. The heat from the grill will make the beer start to boil, cooking the chicken from the inside out.
- When all done the chicken will be all but falling apart, about 90 minutes.
- If making two chickens, repeat process with second chicken and put both of them along with the beer cans inside of them into an aluminum pan. This will keep everything sturdy and you can baste the chickens with the juices collecting at the bottom of the pan.
