| Directions | Combined water, mint extract and pectin in a medium sauce pan. Add food coloring (if desired) and butter. Bring mixture to a rolling boil over high heat, stirring constantly. Add sugar all at once, stirring until sugar is completely dissolved. Return to a full rolling boil and boil exactly (1) minute, stirring continually. Remove from heat and skim off foam with a metal spoon, if necessary. Ladle into very hot sterilized jars leaving 1/4" head space. Wipe rims and threads with a clean damp cloth. Tighten rings and lids. Place in a hot water bath and process for (5) minutes. Remove jars from hot water using a jar lifter and place on a towel and let stand over night to cool. Check seals and store in a cool dry place. Shelf life is one year and, refrigerator life is six months. |
