Preheat oven to 425°. Combine oil, seasoning, vinegar and garlic in bowl and mix well. Place pita rounds on baking sheet. Brush one side of each round with oil mixture using a pastry brush. Slice tomatoes, then top pita rounds evenly with tomatoes and cheese. Bake 10-12 minutes or until cheese is melted and edges are lightly browned. Sprinkle with basil. VARIATION: Roast the cherry tomatoes in a 400 degrees F oven with olive oil, garlic, salt and pepper for 12-15 minutes before using as a topping. |
