COMBINE: First 4 ingredients in a small bowl, stir well. Dip tomato slices in beaten egg. Dredge in cornmeal mixture, coating well on both sides.
HEAT: 2 tablespoons oil in large skillet on medium-high heat until hot. Add 1 layer of coated tomato slices. Fry 3 to 5 minutes or until browned, turning once. Remove tomato slices from skillet. Drain, set fried tomato slices aside, keeping warm. Repeat procedure until all tomato slices are fried. Serve immediately. Yield 6 servings
