Preheat grill to medium heat. Pierce both sides of chops several times with fork. Place in shallow dish. Combine dressing and mustard. Pour 1/2 dressing mixture over chops; cover dish. Refrigerate at least 15 minutes to marinate. Set remaining dressing mixture aside for basting later. Remove chops from marinade; discard marinade. Place vegetables on a foil sheet on the grill and grill chops on each side until desired doneness, approximately 4-5 minutes per side, brushing occasionally with the reserved dressing mixture. NOTE: Vegetables can be roasted in a 400 degree F oven on a baking sheet instead of grilling, if desired. Just drizzle with a little olive oil before roasting. |
