Marinate the meat in the 3 seasoning packets mixed with enough water to cover the meat. This can be done for 30 minutes or overnight in the fridge. In a large skillet, heat 1 tablespoon of vegetable oil. Stir fry broccoli and carrots for 1 to 2 minutes. Break all noodles up into small pieces and add to pan with vegetables. Add 2 1/2 cups of water to pan and bring to a boil Cover and reduce heat. Simmer on low until all water is absorbed (add more if you need to) and veggies and noodles are tender. Transfer to a warm platter. In the same skillet, heat another tablespoon of oil. Remove beef from marinade. Add beef (1/2 at a time). Stir fry 1 or 2 minutes, just until meat is no longer pink. Spoon beef and pan juices over noodles. |
