Naughty and Nice Chocolate Cupcakes - Recipe

Preheat oven to 350°.

Place 18 paper baking cups in a muffin pans. Combine all the cupcake ingredients, except the chocolate chips, in a large bowl and beat with an electric mixer until smooth, about 2-3 minutes. Fold in the chocolate chips.

Spoon batter into cups. Bake for 20 minutes. Remove pans from the oven and cool for 5 minutes. Then remove the cupcakes and cool on a rack.

To make frosting, blend all ingredients together in a food processor or combine in a large bowl and mix with an electric mixer until thoroughly combined. Spread the frosting on the cooled cupcakes.

 
 
Ingredients
- CUPCAKES:
-2 sticks sweet butter, softened (1 cup sticks)
-1 cup superfine sugar(not confectioners)
-1 1/2 cups Self Rising Flour
-4 tablespoons Dutch-process cocoa(I use Hershey Dark)
-1 teaspoon baking powder
-4 eggs
-2 teaspoons cayenne pepper
-1/2 cup semisweet chocolate chips
- FROSTING:
-1 1/2 cups confectioners sugar, sifted
-1/2 cup Dutch-process cocoa
-3 tablespoons Tia Maria or Godiva Chocolate Liquer
-1 stick sweet butter, softened (1/2 cup stick)
