Combine four, baking powder, salt, brown sugar,and white sugar. Set aside. Beat egg with milk or apple juice, oil and vanilla. Add dry ingredients to liquid mixture and stir until flour is well moistened.
Stir in nuts and apple pieces. Grease muffin tins and fill. Mix extra sugar and cinnamon together and sprinkle on top of muffins before baking. Bake at 400° for 20 minutes or until golden brown. Makes one dozen.
