Directions
  • Combine spinach leaves, berries, cheese and pecans (and red onion, if desired) in a large salad bowl.
  • Shake dressing ingredients together in a jar with a lid, then drizzle over the salad ingredients.
  • Serve immediately.

- SALAD INGREDIENTS:
-8 ounces fresh spinach leaves (use baby spinach or tear larger spinach leaves into pieces)
-1 1/2 cups fresh strawberries, sliced (or substitute whole fresh blueberries)
-1/2 cup pecans, toasted until they just start to brown slightly
-1/2 cup crumbled blue cheese or goat cheese
-1/4 cup thinly sliced red onion (optional)
- DRESSING INGREDIENTS:
-2 tablespoons Balsamic vinegar
-1/4 cup extra virgin olive oil
-2 teaspoons brown sugar
-1 teaspoon Dijon mustard
- Kosher salt and freshly ground black pepper to taste
