| Directions |
- Preheat oven to 375 degrees F. Spray a 9x13 inch pan with non-stick cooking spray.
- In a large skillet melt butter over medium heat. Saute onions and broccoli until soft. Add garlic and cook 1 minute more.
- In a large bowl, mix together corn muffine mix, milk, ricotta, eggs, salt and cheese.
- Pour in vegetables and stir to combine.
- Pour mixture in a prepared pan and bake in oven for 25-30 minutes, or until golden brown.
