Tangy Pea Salad - Recipe

I am always looking for a new salad recipe that is different from the same old, same old. This one is delicious. It has a bit of a twist with the tangy balsamic vinegar. Fresh peas would put this over the top!

Directions
  • In a skillet over medium heat, toast almonds in a skillet. Allow to cool.
  • Place peas in a strainer and run cold water over them until they are thawed. Shake excess water off and place in a large bowl.
  • In a small bowl, stir onions, cheese, mayonnaise and vinegar; season with pepper.
  • Add almonds and gently combine with peas. Cover and refrigerate until ready to serve.

-16 ounces frozen green peas
-1/2 cup green onions , chopped
-1/2 cup cheddar cheese, diced
-1/2 cup mayonnaise
-2 tablespoons white balsamic vinegar
- black pepper, to taste
