| Directions | Preheat oven to 425°. Sift flour, baking powder and salt into bowl and add oat bran and sugar. Stir well to combine. In a separate bowl, beat eggs, milk and oil. Pour into dry ingredients. Stir only briefly. Add blueberries and nuts and stir briefly again. Do not overwork--lumps of flour will show. Fill greased muffin cups nearly to the top. Bake 20 minutes or until golden brown. Makes 12 small muffins. |
