Banana Pudding Popsicles - Recipe

With the weather turning warming, try cooling off with these homemade popsicles. These aren't so full of sugar like the store-bought kind. Add chocolate chips for a little texture.

Directions
  • In a large saucepan, add sugar, cornstarch, salt and milk; whisk until combined. Bring to a boil over medium heat, stirring occasionally. Boil for 1 minute, stirring constantly.
  • Remove from heat and stir in vanilla.
  • Put about half the pudding in a food processor or blender and add bananas.
  • Process until smooth. Stir the mixture back into the remaining pudding.
  • Divide the mixture among freezer-pop molds.
  • Insert the sticks and freeze until completely firm, approximately 6 hours.

-2 tablespoons cornstarch
-1 pinch salt
-2 cups milk
-2 teaspoons vanilla
-2 bananas , diced
