| Directions |
- In a food processor, add the bay leaves, peppercorns, mustard seeds, garlic, chile, onion, parsley, and thyme. Pulse into a paste.
- In a small saucepan, place vinegar, water, sugar and salt over medium heat. Simmer until sugar is dissolved.
- Add the seasoning paste and simmer for 1 to 2 minutes. Place the mushrooms in a container and pour the hot liquid over it. Cover and steep at least 1 minute.
- When ready to serve, stir and drizzle with extra-virgin olive oil.
