Preheat oven to 400 degrees. In a large shallow baking dish combine butter, lemon, sugar and vanilla. Add peaches, turning to coat with butter mixture. Arrange peaches in a single layer cut side down. Roast until peaches are tender and liquid is syrupy, 15-20 minutes, brushing with cooking liquid half way through. Serve peaches warm or at room temperature with ice cream and raspberries, if desired. |
