| Directions | - Melt butter in large saucepan over medium heat. Add vegetables; cook 5 minutes, or until vegetables are crisp-tender, stirring frequently. Add curry powder and red pepper; cook and stir an additional 1 minute.
- Stir in ham, raisins and broth; bring to a boil. Add couscous; mix well. Cover; remove from heat. Let stand 5 minutes, or until liquid is absorbed. Uncover; fluff with fork.
- Garnish with the almonds, cilantro and/or yogurt, if desired.
