Chicken Stew - Recipe

This is an easy kid-friendly meal that my family loves. I serve this over white rice.

Directions
  • Brown chicken in olive oil over medium-high heat. Season with Sazon, Adobo, salt, and pepper.
  • Add beans, tomato sauce, and water to cover the chicken. Cover and reduce heat to low, cook about 1 hour or until chicken is tender. (I like mine to be falling off the bone, which takes about another 1/2 hour.)
  • The potatoes should be added when they will have 20 minutes to 1/2 hour to cook before the chicken will be done.

-1 whole chicken, cut up, skin removed
-4 medium potatoes, peeled and diced
-1 can pinto beans - drained
-1 can tomato sauce
-1 package Sazon seasoning
- Olive oil
- Adobo seasoning
- Salt
- Pepper
