| Directions |
- Boil potatoes in skin. Cool and remove skins before slicing.
- Melt butter and saute pimento and bell pepper; add flour and stir.
- Add milk and cheese; stir and remove from heat when cheese is completely melted.
- Layer sauce and potato slices twice, ending with sauce.
- Bake at 350 degrees for 30 minutes.
