| Directions |
- Fillet the two chicken breasts, so that you have (4) pieces.
- Coat the pieces of chicken with oil; then sprinkle the fajita mix evenly on the chicken breasts. Rub it in evenly.
- Optional - place the seasoned chicken in a plastic bag and let it sit in the refrigerator for a few hours to marinate.
- Cook the chicken on the grill.
- Move to top rack temporarily and put a piece of foil on the main rack of the grill and transfer grilled chicken onto it. (This helps keep salsa and cheese from falling into the grill.)
- Generously cover each piece of chicken with salsa and sprinkle desired amount of cheese of top.
- Close cover and leave on grill until cheese is melted.
- Remove and serve.
