| Directions |
- Preheat oven to 400 degrees F. (200 degrees C.). Use muffin pan for 12 muffins.
- Sift flour, baking powder, sugar, and salt in large bowl. Add cheese and bacon, mix to combine. Whisk broth or milk, oil, eggs, and shallots in separate bowl; add to dry ingredients. Stir until just combined.
- Fill 12 muffin tins evenly. Bake 20 minutes or until a tester inserted in center comes out clean. Remove from oven and sprinkle with grated cheese on top, if desired.
