Tortellini Soup - Recipe

Directions
  • Boil sausage until cooked; then slice in half circles and fry slightly with onions and garlic. Drain grease, if any.
  • Add all other ingredients (except tortellini, zucchini, and parmesan cheese).
  • Cook until the carrots are somewhat tender. Add zucchini and tortellini and cook till zucchini is tender.
  • Add the tortellini about 10 minutes prior to serving so that it doesn't get overcooked.
  • Serve with parmesan cheese sprinkled on top.
 
 
Ingredients
-1 pound Premio Sweet Italian Sausage (not the hot and spicy type), large links
-1/2 onion - chopped
-6 cups beef broth (or bouillon)
-16 ounces tomato sauce
-2 cans chopped stewed tomatoes with basil and oregano
-1 cup carrots - cut in half circles
-1/2 teaspoon dried basil
-1/2 teaspoon oregano
-1 small zucchini - thinly sliced in half circles
-1 package cheese filled tortellini (8 oz. bag)
-1 tablespoon parsley
- pressed fresh garlic to taste
- grated fresh parmesan cheese for garnish
