Sausage, Peppers, and Potatoes - Recipe

Directions
  • In a frying pan, parboil sausage for about 10 minutes.
  • While the sausage is cooking, mix the peppers, potatoes, and onion in a large baking dish.
  • Remove the sausage from frying pan after the 10 minutes of cooking time and add to the baking dish.
  • Add the oregano and pepper to baking dish and mix.
  • Add the olive oil and water and mix.
  • Cook at 375ºF for about 1 hour (until potatoes are soft). You may need to add water from time to time, but be careful not to add too much.
  • Serve with Italian bread.
  • Note: You may want to dice the sausage before mixing it in with the other ingredients.

-6 Premio sweet or hot sausage (you may wish to use a combination of both)
-2 large green bell peppers - cut into long slices
-2 red bell peppers - cut into long slices
-1 large yellow onion - cut into half moon slices
-5 large eastern potatoes - cubed
-2 tablespoons ground oregano
-1/2 tablespoon ground black pepper
-1 large garlic clove - diced
-1 cup water
-2 tablespoons olive oil
