| Directions |
- In a frying pan, parboil sausage for about 10 minutes.
- While the sausage is cooking, mix the peppers, potatoes, and onion in a large baking dish.
- Remove the sausage from frying pan after the 10 minutes of cooking time and add to the baking dish.
- Add the oregano and pepper to baking dish and mix.
- Add the olive oil and water and mix.
- Cook at 375ºF for about 1 hour (until potatoes are soft). You may need to add water from time to time, but be careful not to add too much.
- Serve with Italian bread.
- Note: You may want to dice the sausage before mixing it in with the other ingredients.
