| Directions |
- Fill large pot with water and heat on medium (for cooking noodles).
- Add olive oil to a large skillet or spray the skillet generously with cooking spray.
- Add sausage, peppers, and onions.
- Cover and cook over medium heat, stirring occasionally until sausage is just about done, about 15 minutes.
- Cook another 5 minutes uncovered.
- Reduce the heat under the skillet to low and add the salsa. Stir well to combine the sausage, peppers, onions, and salsa.
- While the sausage and vegetable mixture is simmering, add the noodles to the pot of boiling water. Cook until tender.
- Serve the sausage, peppers, and onions over a small bed of noodles and top with some grated Parmesan cheese.
