| Directions |
- Bring large pot of water to boil for penne; cook and drain.
- At the same time, in a non-stick saute pan, brown the sausage on both sides; then remove and cut into portions.
- Continue to cook sausage, add garlic, large pinch of dried basil, and 1/4 cup olive oil.
- When garlic is translucent (1-2 minutes) add chicken stock. Bring to a boil.
- Add spinach and let simmer until pasta is done.
- Add sauce to pasta and stir.
- Serve with fresh, chopped tomatoes, and Romano cheese.
