| Directions |
- Bring a large pot of water to a boil. Cut the tops off the peppers, remove the seeds and rinse. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set upside-down on paper towels to cool.
- In a large saute pan, heat oil over medium heat. Saute onion and parsley unt tender.
- Add tomatoes, tomato paste, water, and seasonings. Simmer 30 minutes.
- Preheat oven to 350 degrees.
- In another large saute pan, brown ground beef; drain. Remove from heat.
- Stir in tomato sauce, rice, breadcrumbs, egg and remaining seasonings.
- Fill peppers with meat mixture and place in baking dish. Pour sauce over peppers.
- Cover and bake for 1 hour.
