  • Using covered enameled roasting pan or Dutch oven add chopped onion, celery, potatoes, beef broth, beef, oil, flour, water, salt, and pepper.
  • Place in oven at 350. for 1 to 1 1/2 hours.
  • Then add the carrots, lima beans, white onions, corn, and apple juice. Place back in the oven for about 30 to 40 minutes longer or until vegetables are tender.
  • When done, add additional flour or water to thicken or dilute as needed before serving.
  • Serve with hot buttered biscuits or cornmeal muffins. Serves 4 to 6.
Note: You can substitute wine with the apple juice.

-1 tablespoon vegetable oil
-1 1/2 pounds stewing beef
-1/2 cup chopped onion
-1/2 cup sliced celery
-3 cups beef broth
-2 carrots
-2 medium potatoes cut into small pieces
-1/2 cup lima beans
-1 cup apple juice
-1/2 cup frozen corn
-12 ounces small white onions, drained or 1 dozen frozen, thawed
- Salt and pepper to taste
-2 tablespoons flour
-2 tablespoons cold water
