  • In a large saucepan or soup kettle, combine the potatoes, onions, water and salt; bring to a boil.
  • Reduce heat, cover and simmer until potatoes are tender.
  • Stir in milk, evaporated milk and cheese; heat until cheese is melted.
  • Add shrimp, butter and parsley. Heat through.

-2 onions, sliced
-3/4 teaspoon salt
-1 1/2 cups milk
-5 ounces evaporated milk
-4 ounces processed cheese (Velveeta) cubed
-6 ounces small shrimp, drained or 1 lb fresh shrimp
-2 tablespoons butter
-1 tablespoon fresh parsley, minced
