| Directions | - In a large skillet, melt the butter; then sauté the onions.
- Stir in the flour, salt, and pepper.
- Slowly add the half & half and the chicken broth; stir until thickened.
- Stir in the pimento, almonds, and the cubed cooked chicken.
- Add the packaged rice mix and blend well.
- Transfer to a 9- x 13-inch baking dish, and bake uncovered in a 400ºF oven for 30 minutes.
