| Directions | - In a large mixing bowl, cream together the butter and sugar.
- Beat in the pumpkin, egg, and vanilla.
- Combine the flour, oats, baking soda, cinnamon, and salt; then gradually add this dry mixture to the creamed mixture.
- Stir in the chocolate chips.
- Drop by teaspoonfuls 2 inches apart onto an ungreased cookie sheet. Bake at 350ºF for 10-12 minutes or until lightly browned.
- Cool the cookies on wire racks. Yield: 10 dozen.
