| Directions |
- Brown meat and onion, saving 1 tablespoon of grease.
- Add potatoes to casserole dish, sprinkle the grease over the potatoes.
- Cover and microwave 4 to 6 minutes or until potatoes are tender.
- Sprinkle with 1/4 tsp salt.
- Combine eggs, 1/2 tsp salt, milk and pepper, and pour over potatoes.
- Sprinkle meat on top.
- Microwave uncovered 3 minutes.
- Lift edges with spatula so uncooked portion spreads evenly.
- Reduce power to medium and microwave 8 to 14 min or until eggs are almost set, rotating dish during cooking.
- Add cheese the last 2 min of cooking.
- Let stand loosely tented with foil 2 minutes before serving.
