Directions
  • Brown meat and onion, saving 1 tablespoon of grease.
  • Add potatoes to casserole dish, sprinkle the grease over the potatoes.
  • Cover and microwave 4 to 6 minutes or until potatoes are tender.
  • Sprinkle with 1/4 tsp salt.
  • Combine eggs, 1/2 tsp salt, milk and pepper, and pour over potatoes.
  • Sprinkle meat on top.
  • Microwave uncovered 3 minutes.
  • Lift edges with spatula so uncooked portion spreads evenly.
  • Reduce power to medium and microwave 8 to 14 min or until eggs are almost set, rotating dish during cooking.
  • Add cheese the last 2 min of cooking.
  • Let stand loosely tented with foil 2 minutes before serving.
