Creamy Bacon, Egg and Cheese Breakfast Carabonara - Recipe

Directions
  • While pasta cooks, cook bacon over medium in large skillet until half done.
  • Add onion, peas and carrots and cook until bacon is done.
  • Drain fat and then add cream and let warm until pasta is done.
  • Beat eggs, salt, pepper and 1/2 cup parmesan.
  • Add pasta to skillet and stir.
  • Then add eggs and cook until eggs are cooked, but appear a little wet.
  • Plate the pasta and sprinkle with additional parmesan.

-12 ounces pasta - cooked
-1/2 cup onion - chopped
-2 cups frozen mixed vegetables - pea and carrot combination, rinsed with water
-1 cup cream
-6 ounces bacon - cut into 1/2 inch strips
-4 eggs
-1/2 teaspoon salt
-1/2 teaspoon pepper
-1 cup grated Parmesan
