Mexican Corn Bread Recipe
Directions
  • Combine corn mix and onion.
  • Combine the remaining ingredients and add to the corn bread mixture just until moistened.
  • Pour into greased 9 x 13 pan.
  • Bake at 350° F for 50 to 55 minutes or until lightly browned.
  • Serve warm.

-2 packages corn bread mix
-1 onion - medium in size, chopped
-2 cups shredded cheddar cheese
-1 can creamed corn
-1 1/2 cups sour cream
-4 eggs - beaten
-4 ounces green chiles - chopped
-1/3 cup vegetable oil
-1 tablespoon jalapeño - finely diced
