| Directions |
- Beat eggs until light in color.
- Add sugar and beat until thick and lemon-colored.
- Add oil; beat well.
- Add zucchini and vanilla.
- Sift together dry ingredients.
- Blend well.
- This makes about 3 small loaves of bread.
- Grease and flour pans.
- Bake at 350° F for 1 hour, or less.
- Set timer for 45 mininutes and watch closely for the last 15 minutes.
- Don't over bake.
- For muffins, line muffin pans with paper liners.
- Bake for 40 minutes or until done.
- Makes 28 muffins.
