| Directions |
- Preheat oven to 350 degrees. Line muffin cups with paper liners or grease the cups.
- In a large bowl, combine eggs, pumpkin and oil. In a separate bowl, sift together flour, sugar, pumpkin pie spice, soda and salt. Add flour mixture to pumpkin mixture and stir to moisten. Fold in apples. Spoon into muffin cups.
- For streusel topping, combine flour, sugar and cinnamon. Cut in butter until mixture becomes coarse crumbs. Sprinkle topping over muffin batter.
- Bake for 35-40 minutes.
