| Directions | NOTE: Suitable for diabetics. Preheat oven to 350°. Mash banana in a large bowl, add the egg white, vanilla extract, butter and dried fruits. Let stand 5 minutes to soften the fruits. Add remaining ingredients. Mix until oats are blended in good. Drop by tablespoonful onto a cookie sheet which has been sprayed with Pam. Bake for 10 minutes. Remove from oven, let sit 1 minute, then remove to a wire rack to cool. Store in an air tight container. Makes 3 dozen cookies. Freezes well. Enjoy! |

- | | 1 cup dried fruits, such as raisins, cherries, apricots, prunes, dates, cranberries |
