Trim excess fat from the pork loin. Gently massage the BBQ rub all over the loin. Be creative with your rub and make it as sweet, spicy or hot as you desire. Wrap the entire pork loin in bacon strips and fasten them with toothpicks. Place the loin in a high sided roaster (disposable ones work great) and pour the beer in the pan. Place the pan on medium heat for 1/2 hour. Reduce heat. Cook until done with the grill covered. |
