Cut up eggplant into slices and sprinkle sea salt on each slice. Let sit for 30 minutes.
Cook slices on a grill.
Take the fresh parsley, oregano, and basil, chop fine. Chop up the tomatoes fine and mix together with the parsley, oregano, and basil.
Mix in the goat and mozzarella cheese.
Spread the mix on top of the eggplant and lightly top w/ grated parmesan. |
