| Directions | Cook potatoes according to package directions; drain well. Combine potatoes, eggs, ham or sausage, 1 cup tomatoes, 3/4 cup green peppers and onions in large bowl; stir well. Pour mixture into lightly-greased 13x9x2" baking dish. Bake, uncovered, at 325 for 40 minutes. Top with remaining 1/4 cup tomatoes and 1/4 cup green peppers. Sprinkle evenly with cheese. Bake an additional 5 minutes, or until cheese melts. |
