To make vanilla pudding/pie filling: Mix in saucepan: Sugar, cornstarch and salt. Stir in milk gradually. Cook over medium heat stirring continually until mixture thickens and boils. Boil for 1 minute. In a separate bowl beat egg yolks slightly; Stir half of hot mixture in egg yolks 1 spoonful at a time. add egg yolk mixture back into saucepan. Stirring continually bring mixture to a boil again; stir remaining ingredients into the cream mixture. Banana Cream Pie: 2 bananas sliced on bottom of shell. Pour filling over bananas. Add more bananas on top with whipped cream. Coconut Cream Pie: Add to vanilla cream mixture 2 tsp. Vanilla; stir in 3/4 C. coconut. Sprinkle coconut on top. Chocolate Cream Pie: to the vanilla pudding mixture increase sugar to 1 1/2 C., cornstarch to 1/3 C. and add 2 1 oz. squares of baking chocolate. Add chocolate curls on top if desired or whipped cream. |
