Directions
Mix all ingredients together (I do it by hand, less cleanup) and pour into a greased and floured 9x13 pan. Bake at 350° for 45 minutes - 1 hour. Test by inserting a toothpick or knife. Frost with cream cheese frosting. Beat frosting ingredients well and frost cake while still slightly warm.

-1 1/2 cups oil
-3 Eggs
-8 ounces crushed pineapple, with the juice
-1 teaspoon Salt
-2 cups sugar
-2 cups flour
-2 cups unsweetened coconut
-2 cups grated carrots
-2 teaspoons cinnamon
-2 teaspoons soda
-2 teaspoons Vanilla
- Cream cheese frosting
-1 package cream cheese, softened
-2 cups powdered sugar (more as needed)
-1 tablespoon pineapple juice (more if needed)
