| Directions |
- Preheat oven to 400°.
- Spread cauliflower pieces on baking sheet. Sprinkle with about 1/4 cup olive oil. Sprinkle with rosemary, salt and pepper.
- Bake in oven 20 minutes, stirring occasionally, until lightly browned and tender.
- When done, immediately place in large bowl with sour cream, ranch dressing, cheeses, garlic, salt & pepper, and butter.
- Using immersion blender, process all until smooth. You may need to add more ranch dressing if it seems dry.
- Season with salt and pepper if needed. Garnish with green onion. Serve hot.
