| Directions |
- Peel cassava and grate onto a piece of cheesecloth or other lightweight fabric. Twist fabric around grated cassava to wring out as much moisture as possible.
- Add a pinch of salt, mix in and divide the cassava into 4 portions. Shape each into a thick pancake about 4" across.
- Heat oil over medium heat in a skillet or griddle. Fry bammies 8 to 10 minutes each side.
- Put coconut milk in a wide shallow bowl and soak fried bammies 5 to 10 minutes. Return to skillet or griddle and fry until golden brown. Serve hot.
