Preheat oven to 400°. In a stand-up mixer bowl, whisk together flour, cornstarch, nutritional yeast, xanthan gum, salt, sugar, and yeast. Heat your water in the microwave for about one minute. It should be at least 115°, no more than 120°! Add your water, oil, and vinegar to your flour mixture. Mix for 3 minutes at medium speed. While your dough is mixing you can grease your loaf pan. (You can also use a hand mixer, see my recommendation in the 411 section.) Transfer the dough into your pan. Smooth down the dough with your hands. I recommend that you do this by your sink and use warm water to put on your hands. Let rise in a warm room for about 10 - 15 minutes. (You can create your own "Proofing Oven" by following the directions in the 411 section.) The dough should rise up about 1 1/2" above the top of the pan. Place in the oven and bake for 15 minutes. Cover loosely with foil and bake for an additional 45 minutes. Remove from oven. Immediately remove bread from the pan and let cool on a cooling rack.
