Tender Scones - Recipe

After just one taste, you'll find these terrific scones hard to resist, especially when prepared with a variety of optional ingredients such as, dried currants, cherries, apricots, or strawberries; chocolate chips, chopped chocolate, or white chocolate chips; or citrus zest, cinnamon, or nutmeg.

Directions
  • Sift together flour, salt and baking powder and 2 tablespoons sugar in a large bowl.
  • Cut in butter with fork or pastry blender until it resembles small pebbles.
  • Mix in egg and 1/2 cup plus 2 tablespoons cream.
  • Stir in any combination of ingredients you want. I used 1/2 cup craisins and 1/2 cup white chocolate chips.
  • Preheat oven to 400°F.
  • Turn dough out onto lightly floured surface and knead lightly. Pat into a 9" circle and about 1/2" thickness.
  • Cut into 12 wedges. Place on baking sheet (not greased).
  • Separate, brush tops with a little cream. Sprinkle with remaining 2 tablespoons sugar.
  • Bake 15 minutes or until light brown.
  • Serve warm.

-2 cups flour
-1/2 teaspoon salt
-1 tablespoon baking powder
-4 tablespoons sugar - divided
-6 tablespoons unsalted butter
-1 egg - large, beaten
-1/2 cup heavy whipping cream - plus 2 tablespoons
- plus more for brushing on tops
- OPTIONAL ADD-IN INGREDIENTS
-1 cup any combination or single of these ingredients:
- apricots - dried, chopped
- raisins or dried currants
- dried cherries
- dried strawberries
- chocolate chips or chopped chocolate
- white chocolate chips
-3/4 teaspoon cinnamon
-1/2 lemon - zested
