Spicy Turkey Paella - Recipe

The classic Spanish dish is given an American flair in this delicious version that contains wild rice and leftover turkey.

Spicy Turkey Paella Recipe
Directions
  • Brown the sausage in a small skillet, drain on a paper towel to remove excess grease.
  • In a large skillet, heat oil over medium heat.
  • Add onion and garlic and sauté until tender, stirring occasionally.
  • Add the bell pepper and cooked rice, stir to combine.
  • Add in the broth, tomatoes, salt, oregano and black pepper.
  • Bring to a boil, reduce heat back to medium and cook for approximately 15 minutes.
  • Add the sausage, turkey and peas.
  • Cook for five more minutes and serve hot with a crusty French bread.

Ingredients
-12 ounces spicy sausage links - cut in 1/2 inch slices
-1/4 cup olive oil
-2 cloves garlic - crushed and chopped
-2 onions - diced
-1 red bell pepper - seeded, and chopped
-2 cups long grain and wild rice - cooked
-4 cups chicken broth
-3 tomatoes - large sized, diced
-1 teaspoon salt
-1 teaspoon oregano - dried
-1/2 teaspoon cayenne pepper
-4 1/2 cups turkey - cooked and cubed
-1 cup peas - frozen (optional)
