Put salt, sugar, cardamom (shelled and crushed) and hot milk into large bowl. Add 5 C. flour and beat until smooth. Add beaten eggs, mix well. Add yeast, softened in 1/2 C. warm water and mix. Add rest of flour and knead 10 minutes. Add butter in 3 parts, kneading after each. Cover bowl and let rise until doubled in bulk. Using 1/4 of dough at a time, roll in rectangle. Sprinkle with sugar and cinnamon. Roll up and cut into slices and place in pans to rise until light. Bake at 375° for 20 minutes.
*Note: For caramel rolls: put caramel in pan before placing slices to rise:
Combine caramel ingredients and heat on stove. Pour into pan and add sliced sweet roll dough. This is enough caramel for 1- 9x13" pan and 1- 8" pan.
