| Directions |
- Preheat oven to 325° F.
- Beat butter, one cup of sugar until creamy.
- Add eggs one at a time making sure that each is incorporated before adding the next.
- Mix in the lemon peel.
- In a small bowl, combine the flour, baking powder, salt, nutmeg and cinnamon. Stir until all is blended.
- Mix half of the flour mixture into the butter mixture.
- Add the milk followed by the rest of the flour.
- Stir just until incorporated.
- Scrape into a buttered, floured 8 inch glass or ceramic baking pan.
- Overlap the plum slices in rows or circles on top of the batter.
- In a small bowl, mix the remaiing 2 tablespoons of sugar and cinnamon.
- Sprinkle over the plums.
- Bake for 40-50 minutes or until a toothpick inserted into the center comes out clean.
